Purple Spoon 1st Episode Recipe 2 Bean Chili
We want to extend a huge THANK YOU to everyone who tuned in to watch our very first episode of The Purple Spoon Project! We had a great time going live, cooking up a delicious Two-Bean Chili, and sharing helpful tips on how to cook with dried beans.

Angels Community Outreach has received so many dried bean donations for our food pantry, and we know that many people are unsure how to cook them. Honestly, I am one of those people too! But after trying this recipe, I’m definitely going to incorporate dried beans into more of my meals. They’re affordable, nutritious, and easy to use once you get the hang of it.

Two-Bean Chili Recipe
(Prepared with dried beans – Serves 4-5 adults)
Ingredients:
• ¾ cup pinto beans (soaked, quick or long method)
• ¾ cup black beans (soaked, quick or long method)
• 3 – 4 cups broth of your choice (chicken, beef, or vegetable) – less broth = thicker chili
• Spices (adjust as needed):
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp celery flakes or seeds
• 1 tsp cumin
• ¼ tsp chili powder (optional, adjust to taste)
• ½ tsp salt
• ¼ tsp pepper
Instructions:
1. In a 4-5 quart pot or Dutch oven, bring the beans, broth, and spices to a simmer.
2. Let simmer for 15-20 minutes, checking flavor and adjusting as needed. Beans should be almost fully cooked but not completely soft.
3. Add:
• 1 (15 oz) can tomato sauce
• 1 (10 oz) can roasted tomato with green chilies
4. Simmer another 15 minutes until beans are fully soft.
5. While the chili simmers, prepare:
• ⅔ cup par-cooked ditalini or other small pasta
• Jiffy corn muffin mix (as directed on the box).
6. Add 8 oz canned corn (drained) and par-cooked pasta. Simmer another 10-15 minutes or until everything is fully cooked.
7. Serve and enjoy!
