PURPLE SPOON PROJECT EPISODE #2

This episode the theme was opening day! (Think of the baseball park!) It was all about fun, flavor, and getting creative in the kitchen. Here’s what we whipped up:
• Homemade Pretzels- turned into Charcuterie Pretzels. We topped them with all kinds of goodies for a sweet & savory twist!
• Cheesy Chicken Sliders- easy, delicious, and perfect for family dinners.
• And just in time for baseball season… we decorated vanilla frosted doughnuts to look like baseballs (so cute and tasty)!
There were lots of laughs, messy fingers, and moments that reminded us that cooking isn’t just about food… it’s about memories.
Everything was easy to make, budget-friendly, and kid-approved!
We’ll also be providing some of the ingredients and printed recipes to our clients in the coming weeks because everyone deserves to enjoy the joy of cooking at home.

Soft Pretzels
3 ¼ cups all-purpose flour (390g)
1 tsp baking powder
1 tsp salt
1 ¾ – 2 cups Greek yogurt: use full fat OR fat free (I used half full fat and half fat free)
For topping:
1 egg with 1 tsp of water whisk together for egg wash
Salt, sesame seed, butter, cinnamon sugar, poppy seed
-Combine flour, baking powder and salt in a large bowl and whisk
-Starting with 1 ¾ cup of yogurt (at room temperature), mix the dough together with a spoon. -Add more yogurt by tablespoon until mixture comes together. Empty contents onto the counter and knead briefly until a dough ball is formed. It should not be sticky, or too dry.
-Cut ball into four equal sizes, sprinkle counter lightly with flour.
-roll each quarter of dough into a long string that measures 18-20 inches in length.
And twist into a pretzel form. Make a U, cross the strands, bring one side under bottom of U and the other to the top side of the U. Diagram below.
-Place each pretzel on a cookie sheet lined with parchment.
-Egg wash each pretzel with egg wash, using a pastry brush.
-sprinkle with salt and your desired topping *****Cinnamon sugar is added after baking -see instruction below.
-Bake at 400F in a pre-heated oven. Rotate baking sheet after first 15 minutes. Bake another 8 minutes, check color. Continue to bake until pretzels are the desired color. (5-6 minutes)
-Eat when they are cool. Best when consumed warm.
*****Cinnamon sugar: when pretzel comes out of the oven, spread with room temperature butter, then sprinkle generously with cinnamon sugar. Enjoy
Chicken Sliders
Ingredients:
12 pack Hawaiian rolls
½ pound deli buffalo chicken
½ pound sliced pepper jack cheese
1 bag Arugula
8 oz bag, shredded 3 cheddar cheese mix
low fat mayonnaise
Fat free Greek yogurt
Franks buffalo wing sauce
Instructions:
-slice rolls horizontally across keeping them attached. You will have 2 ‘sheets’ of buns. Place the bottom with the baked side down, cut side up, on a sheet pan or into a 9×13 baking dish, lined with parchment paper.
-Make buffalo sauce: ⅓ c mayonnaise, ⅓ cup yogurt and 2-3 Tablespoons of Franks buffalo sauce. Mix together
-spread buffalo sauce on cut side of rolls
-place pepper jack cheese on sauce in an even layer.
-place buffalo deli chicken on top of cheese in an even layer.
-sprinkle a layer of shredded 3-cheddar cheese.
-place Arugula on top in the amount desired.
-Spread buffalo sauce on the cut side of the top buns. Place sauce side down, on top of the Arugula. Press down.
Bake in a 350F oven for about 12 minutes. Slice buns apart and enjoy. These can be made ahead and kept in the refrigerator until placed in the oven. In this case they will take a little longer to bake and become warm inside. Check that the top of buns do not become too dark, you may have to put some foil on top to protect from burning.
Substitutions
Chicken Sliders and Pretzel Ingredients
Sliders:
Meat: Rotisserie chicken, home baked chicken, turkey or pork- evenly shredded
Store purchased shredded meat in chicken or pork.
Sliced Roast beef, baked and sliced at home.
Deli meat: any chicken, turkey, roast beef, pork, pastrami or corn beef.
Whatever you enjoy, but it should be thin, or shredded for a slider roll.
Sauce: Purchased dressing: Ranch, creamy Italian, horseradish, BBQ, Buffalo.
Make your own. Use the recipe of mayonnaise and Greek yogurt and add honey and Dijon mustard, or horseradish.
-Whatever you use, make it creamy so it doesn’t make the bun soggy.
Cheese: Whatever you like. It can be spicy or neutral. Sliced melts evenly, shredded goes into ‘nooks and crannies’.
Crunch: Any greens you like – spinach, lettuce, cabbage, pickles, cucumbers
Suggested Combinations:
1. Turkey, cranberry sauce, turkey stuffing, French dressing, mild cheese
2. Popcorn shrimp, gochujang mayonnaise, crisp pickles, sharp cheese
3. Shredded pork, coleslaw, BBQ sauce, jalapeno pepper jack cheese
4. Roast beef, red cabbage slaw, horseradish sauce, pepper jack cheese.
